Vegan Bran Fruit Loaf

Moist & filling Vegan Bran and Fruit Loaf. Filled with juicy fruit and hearty bran, for the perfect breakfast loaf. Made in one bowl and no mixer required!

Bran and Fruit Loaf Cake is the PERFECT breakfast!  A big, thick slice of this vegan loaf cake makes for the perfect set-up for the day ahead.  

We’re talking:

And the best bit, is this cake is super EASY and totally VEGAN! 

So, what do you need? 

Well it’s pretty simple! All you need for this recipe is: 

  • One Mixing Bowl
  • One Spoon
  • One Cup 
  • One Loaf Tin 

and: 

  • 1 cup of All-Bran or Bran Flakes
  • 1 cup of Self-raising Flour
  • 1 cup of Dried Fruit
  • 1/2 cup of Sugar
  • 1 cup of unsweetened milk of choice
  • Handful of Walnuts (optional)

How to Make a Vegan Bran Fruit Loaf 

Step 1 – To a large bowl, add the all-bran, self-raising flour, dried fruit, sugar and unsweetened milk. Whisk them together to combine.

Step 2 – Leave the mixture to soak for at least an hour.

Step 3 – Preheat the oven to 140 *C. Grease a standard 1lb loaf pan ( 8.5 x 4.5 x 2.75 inches) with some coconut oil (or any other neutral oil you have) or line the pan with parchment liner.

Step 4 – Spoon the batter into the loaf pan, smoothing out the top. If desired, top with walnuts for additional flavour then sprinkle lightly with sugar.

Step 5 – Place into the oven and bake for around 90 minutes. Check it at about 70 minutes, by poking it in the centre with a toothpick. If it comes out clean, then it’s done, if not return to oven to continue baking.

Step 6 – Remove loaf tin from oven. Carefully lift the cake from the tin and place on wire rack to cool.

Step 7 – Once completely cooled, enjoy!

Top Tips

  1.  While many recipes require more exact measurements for success, this recipe does not! Feel free to use any cup or mug for measuring ingredients as it is only the proportions that matter for this loaf cake. 
  2. Even if your loaf pan is non stick, I recommend lining the bottom of it with a parchment loaf tin liner. Not only does it make it easier to get the loaf out of the pan it speeds up clean-up!
  3. You can use the toothpick test to confirm your cake is cooked properly. Stick the toothpick in the centre and if it comes out clean then its done. Remember, the timings given here are estimates and the speed your loaf cooks may be slightly different so rely on this test for success.

Notes

  • All-Bran absorbs milk better than Bran flakes however if you do not have All-Bran, bran flakes will still make a delicious cake.
  • Walnuts are an optional topper and do not need to be included. Equally, oats can make a nice alternative.
  • If your Bran Fruit Loaf is browning on top too quickly, cover with foil then return to the oven or turn the oven down to 120*C.
